Butternut Squash Hummus

With fall arriving I wanted to mix up some of the traditional flavors of hummus – tahini, garlic and lemon juice with some of my favorite flavors of fall. As a result, this Butternut Squash Hummus is a familiar flavor but is surprisingly sweet and creamy.

Roasted Butternut is much sweeter than the traditional Chick Pea hummus you might be familiar with. With that being said, I found that the following dipping foods worked perfectly with this style of hummus:

  • Apple Slices
  • Pretzel Chips
  • Keebler Town House & Club Crackers

Ingredients
  1. 3/4 lb cooked butternut squash (about 3 cups)
  2. 2 T lemon juice
  3. 2 T tahini
  4. 8 pitted green olives
  5. 1 clove garlic
Instructions
  1. Using a food processor, puree all of the above ingredients, adding about 1 to 2 tablespoons of water to obtain the desired consistency.
