Butternut Squash Hummus
With fall arriving I wanted to mix up some of the traditional flavors of hummus – tahini, garlic and lemon juice with some of my favorite flavors of fall. As a result, this Butternut Squash Hummus is a familiar flavor but is surprisingly sweet and creamy.
Roasted Butternut is much sweeter than the traditional Chick Pea hummus you might be familiar with. With that being said, I found that the following dipping foods worked perfectly with this style of hummus:
- Apple Slices
- Pretzel Chips
- Keebler Town House & Club Crackers
- 3/4 lb cooked butternut squash (about 3 cups)
- 2 T lemon juice
- 2 T tahini
- 8 pitted green olives
- 1 clove garlic
- Using a food processor, puree all of the above ingredients, adding about 1 to 2 tablespoons of water to obtain the desired consistency.
