Yes, there are gluten-free waffles out there, Matilda! What we love about these waffles is they are light, crispy on the edges, and still have the amazing fluffy on the inside characteristic chew that your old-timey (yes that’s a word – don’t @ me). The basis of this waffle is oat flour. This recipe makes about 6 round waffles.

Ingredients
  1. 1 1/2 cups oat flour
  2. 2 teaspoons baking powder
  3. 1/2 teaspoon kosher salt
  4. pinch of cinnamon
  5. 3/4 cup milk
  6. 5 tablespoons butter, melted
  7. 2 large eggs
  8. 2 tablespoons maple syrup
  9. 1 teaspoon vanilla extract
Instructions
  1. In a mixing bowl, whisk together the oat flour, baking powder, salt, and cinnamon.
  2. In another bowl, whisk together the milk, melted butter, eggs, maple syrup, and vanilla extract.
  3. Pour the wet into the dry. Stir with a large spoon until just combined. Let the batter rest for at least 10 minutes to allow the oat flour to soak up the moisture. Preheat your waffle iron to a medium-high heat.
  4. Once the waffle iron is hot, stir the batter mixture one time through.
  5. Spray your waffle iron with a non-stick spray of your choice.
  6. Pour the batter on the heated waffle iron, enough to cover the surface area. Close the lid.
  7. Cook until the waffle has achieved golden, brown, and delicious color and transfer it to a cooking rack or a baking sheet. Be careful not to stack them on top of each other to keep them in the peek of crispness.
  8. Repeat until you have used all of your batter. Serve the waffles with syrup and butter and enjoy!
