Greek Salad


I love Greek food and yes, this carnivore loves Greek salad! It’s something about the cheese and the perfect blend of acid and tangy. What also rocks is that this salad only takes 15 min of prep time and viola! You have a perfect summer meal or an amazing side salad for anything grilled.

  1. 1 pint grape or cherry tomatoes, halved
  2. 1 cucumber, thin sliced into half moons
  3. 1 cup halved (pitted) kalamata olives
  4. 1/2 red onion, sliced thinly
  5. 4 slices of feta sliced from a block (or you can used 3/4 cup crumbled feta)
  1. 2 tablespoons red wine vinegar
  2. Juice of 1/2 of a lemon
  3. 1 teaspoon dried oregano
  4. kosher salt to taste
  5. Fresh ground black pepper to taste
  6. 1/4 cup extra virgin olive oil
  1. In a large bowl, stir together tomatoes, cucumber, olives, and red onion.
  2. In a small bowl, make dressing: Combine vinegar, lemon juice, and oregano and season with salt and pepper. Slowly add olive oil, whisking to combine.
  3. Place salad into individual serving bowls. Place one slice of the feta (or crumbles) on top.
  4. Drizzle the dressing over the salad.
