Grilled Peach Caprese Salad

Caprese Salad is one of my most favorite summer salads ever. Now, check that. This Grilled Peach Caprese Salad is now my favorite summer salad. When you use fresh peaches, it adds a new layer of flavor to the typical amazing caprese.  Try adding grilled protein to complete your full meal deal.

Ingredients
  1. 2 ripe peaches, cut into 1/2" - thick wedges and grilled
  2. 1 pint cherry or grape tomatoes halved
  3. 1/2 cup fresh corn corn kernels (from a grilled ear of corn)
  4. 1/4 small sweet onion, thinly sliced
  5. 8 oz fresh mozzarella, sliced into rounds
  6. 2 tablespoons extra-virgin olive oil
  7. kosher salt
  8. fresh ground black pepper
  9. 1/2 cup fresh basil, torn into pieces
  10. balsamic vinegar for drizzling
Instructions
  1. For your peaches and corn, prepare your grill to high heat. Lightly oil the peaches and corn and place on the grill. Start with the corn, until it has turned a charred brown all over the cob. Then add the peaches as they will only take 1-3 min to grill.
  2. When they have achieved the proper doneness, remove and allow to cool to room temperature.
  3. Remove the corn kernels using a kernel remover or a sharp knife.
  4. In a large bowl, toss the peaches, tomatoes, corn, onion and mozzarella with the olive oil and 1/2 teaspoon each of salt and pepper and allow to sit for 5 minutes.
  5. Fold in the basil and then transfer to your platter.
  6. Then drizzle the salad with balsamic vinegar.
