Pumpkin Streusel Donuts

You can’t eat just one. That’s true for so many things, but it’s especially true for these pumpkin streusel donuts. Fall is finally here and why not celebrate it with a treat that is bursting with fall flavors.

I love making baked donuts. It’s so easy and looks like you spent a lot of time on them when you really didn’t. We have these awesome donut pans that come in either a regular sized donut or a mini donut. I like to use them both. For this recipe, I used the large one as it makes 6 donuts and that’s how many cavities are in the pan.

Donuts
  1. 1/4 cup butter, softened
  2. 1/2 cup sugar
  3. 1 egg
  4. 1/2 teaspoon vanilla extract
  5. 1/2 cup pumpkin puree
  6. 1 cup soft white wheat flour
  7. 1/2 teaspoon baking powder
  8. 1/2 teaspoon baking soda
  9. 1/4 teaspoon salt
  10. 1/2 teaspoon ground cloves
  11. 1/2 teaspoon ground nutmeg
  12. 1/2 teaspoon ground ginger
  13. 2 teaspoons ground cinnamon
Streusel
  1. 1/2 cup brown sugar, packed
  2. 1/2 cup soft white wheat flour
  3. 1 teaspoon ground cinnamon
  4. 2 tablespoons butter, melted
Glaze
  1. 1 cup powdered sugar
  2. 1 tablespoon milk
  3. 1 teaspoon cinnamon
Instructions
  1. Preheat oven to 375° F. Spray donut pan with baking spray. Set aside.
  2. In a mixing bowl, combine butter and sugar until creamy. Add in egg and vanilla, beat until combined.
  3. Blend in pumpkin puree. Add flour, baking powder, baking soda, salt and spices. Beat until well combined. Batter will be very thick. Spoon into a large plastic resealable bag. Snip off the corner and pipe into donut pans, filling them about 1/2 full.
  4. In a small bowl, combine streusel ingredients with a fork. Sprinkle generously over pumpkin batter. Press streusel gently to the top of batter (it will fill the donut cavity completely at this point).
  5. Bake for 13-15 minutes.
  6. Remove from oven and cool in pan for about 5 minutes, then remove from pan and cool completely on wire rack.
  7. Once cooled, whisk together the glaze ingredients. Drizzle over cooled donuts.
