How to Make Simple Flour Tortillas

This recipe is for a soft flour tortilla and it is so quick and easy. It will yield you a soft and tender tortilla with just a little bit of chew. You can have these on the table in less than an hour. This dough can also be made ahead and you can rest it in the fridge overnight.

Ingredients
  1. 2 1/2 cups all-purpose flour, plus additional as needed
  2. 1 teaspoon baking powder
  3. 1/2 teaspoon salt
  4. 1/4 cup lard (traditional & recommended), butter, shortening, or vegetable oil
  5. 7/8 to 1 cup hot tap water (about 110 F to 120 F)
Instructions
  1. In a medium-sized bowl, whisk together the baking powder, salt, and flour.
  2. Incorporate the lard. Use your fingers or a pastry blender and work the fat into the flour mixture until it disappears. When you incorporate the flour with the fat it inhibits gluten formation, thus the tortillas are easier to roll out.
  3. Pour 7/8ths cup hot water (plus oil if using) and stir briskly with a fork or whisk to bring the dough together to form a mass. Stir in the additional water as you need to bring the dough to a cohesive mass.
  4. Turn the dough out onto a lightly floured counter and knead briefly, just until the dough forms a ball. If the dough is sticky, add just a bit fit of flour at a time.
  5. Divide the dough into 8 even pieces. Round the pieces into balls, Flatten and allow them to rest covered for about 30 minutes. You can coat each ball just slightly in oil before covering; this will ensure that the dough doesn't dry out.
  6. While your dough is resting, preheat a cast iron griddle or tortilla press to a medium-high heat, about 400 F.
  7. Working with one piece at a time, roll into a round 8" circle in diameter. Keep the remaining dough covered while you work. Fry the tortilla in the pan for about 30 seconds on each side. Wrap the tortilla in a clean cloth when it comes off the griddle. This will keep it pliable. Repeat until all cooked.
