Southwestern Chicken and White Bean Soup


In the dead of winter or just on a day that you are seeking comfort, this Southwestern Chicken and White Bean Soup is a hearty soup that is full of chicken, corn, black beans, and diced tomatoes that has a Southwestern zesty flavor.

  1. 1 tablespoon vegetable oil
  2. 1 pound skinless, boneless chicken breasts
  3. 1 3/4 cup chicken broth
  4. 1 cup salsa
  5. 3 cloves garlic
  6. 2 teaspoons ground cumin
  7. 1 can small white beans
  8. 1 cup frozen whole kernel corn
  9. 1 cup pasta
  10. 1 large onion (diced)
  1. In a 10-inch skillet over a medium high heat, heat the oil. Add the chicken and allow it to cook until it is well browned, stir often.
  2. Transfer the chicken to a 3 1/2-quart slow cooker and add the chicken, broth, salsa, garlic, cumin, beans, pasta, corn and onion.
  3. Cover and cook on low for 8 to 9 hours or until the chicken is cooked through.
