Blackberry Streusel Buckle


Blackberries are on at my house. After picking about 8 cups of them, I decided that I needed to make them into something delicious. While they’re super yummy on their own, they can also be a great starting point for an amazing dessert. So with my many blackberries, I made a Blackberry Streusel Buckle. Who can say no to streusel-topped anything? Definitely not me.

Enjoy this summertime dessert with some ice cream or whipped cream. You can also change out the blackberries for any other berry.

  1. 1 cup whole wheat flour
  2. 1 cup granulated sugar
  3. 1 teaspoon baking soda
  4. 1 1/2 teaspoons baking powder
  5. 1/8 teaspoon salt
  6. 1 cup milk
  7. 1/3 cup butter, melted
  8. 2 1/2 cups fresh blackberries, rinsed and dried
  9. 2 tablespoons cornstarch
  1. 5 tablespoons butter, melted
  2. 2/3 cup all-purpose flour
  3. 2/3 cup white sugar
  4. 1 teaspoon cinnamon
  5. 1/8 teaspoon salt
  1. Prepare a 9x9-inch square baking pan by spraying with non-stick spray.
  2. Preheat oven to 350 F.
  1. Whisk together flour, sugar, baking soda, baking powder, and salt.
  2. Add milk and melted butter and mix to combine.
  3. Pour into prepared baking pan.
  4. Toss blackberries with cornstarch until lightly coated. Discard any remaining cornstarch.
  5. Layer blackberries over the top of the batter.
  6. Bake for 45 minutes.
  1. Combine all the streusel ingredients until well combined. You should have large clumps of streusel.
  2. After the buckle has baked for 45 minutes, remove from the oven and top it with the streusel.
  3. Bake for another 10-15 minutes.
  4. Remove from oven and cool for 15-20 minutes before serving.
