Holiday Roast Beef


When you think of the perfect holiday meal on Christmas Eve or Christmas Day, do you picture snow outside? The pine trees frosted with a fresh dusting of snow? A warm fire warming your home from the fireplace? I do too. For me at least, there is a way if you don’t live in an area of the country that can provide you with that winter wonderland, that you can make this Holiday Roast Beef to fill your bellies and hearts with savory cheer.

This rib roast recipe incorporates a quick and easy compound butter with parsley, marjoram, and peppercorns that melt over the tender roast beef.

Holiday Roast Beef Recipe

Beef Roast
  1. 1 10-pound beef rib roast, with the chine bone removed
  2. 2 tablespoons extra-virgin olive oil
  3. Kosher Salt
  4. Cracked Black Pepper
  5. 2 cups chicken stock or a low-sodium broth
  6. 2 rosemary sprigs
  7. 5 thyme sprigs
Herb Butter
  1. 6 tablespoons unsalted butter, at room temperature
  2. 1/4 cup chopped parsley
  3. 2 tablespoons chopped green peppercorns that were brined
  4. 2 tablespoons chopped marjoram
  5. 1 tablespoon chopped thume
  6. 1/2 teaspoon finely grated garlic
  7. 1/2 teaspoon kosher salt
  8. 1/2 teaspoon black pepper
Making the Rib Roast
  1. Preheat the oven to 450 degrees F. Place the roast fat side up on a trivet rack in a roasting pan. Rub the roast with olive oil all over and season generously with kosher salt and black pepper. Add the stock and the rosemary sprigs and thyme to the pan.
  2. Roast for 30 minutes, or until the roast is well browned. Then Reduce the oven temperature to 350 degrees F and allow the roast to roast for an additional 2 and 1/2 hours.
  3. Use an instant read thermometer, place in the center of the roast until the thermometer reads 120 degrees F for medium rare.
  4. Place the roast on a cutting board and tent with foil and allow to rest for 30 minutes before slicing.
Herb Butter
  1. While the roast is roasting, In a small or medium size bowl, combine all the ingredients and mix well. Allow the butter to stand at room temperature.
Before Service
  1. Spread the Herb Butter all over the warm roast. Slice the roast off the bone, then slice.
